Creamy cauliflower and sun-dried tomato pasta
Cauliflower is one of those things that I feel like we don’t eat often enough. I’ve been on a bit of a mission lately to find some new ways to eat it, and this creamy cauliflower and sun-dried tomato pasta is a keeper.
Creamy cauliflower and sun-dried tomato pasta
Ingredients

- 1/4 cup olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 cup nutritional yeast
- 1 onion, chopped
- 6 cloves of garlic, chopped
- 1/2 cup sun-dried tomatoes, chopped into small pieces
- 1 large head of cauliflower, chopped into bite-size pieces
Method
- Cook your noodles.
- Heat the olive oil on medium in a large pan (we use a large cast iron one).
- Add the onion, garlic, and red pepper flakes and cook until the onion softens and starts turning translucent.
- Add the sun-dried tomatoes and the cauliflower, and cover with a lid.
- Cook for about 5 minutes, stirring occasionally.
- Add the nutritional yeast, and stir until well blended.
- Remove from heat when the cauliflower is tender.
- Serve the noodles in bowls, with the cauliflower sauce over the top.
